A TASTE OF REGION AND RELIGION
Kerala cuisine shows clear regional differences. While SADYA
in southern Kerala is purely vegetarian, the North Kerala variety includes non-vegetarian
dishes as well. This regional variation is also due to the local availability
of ingredients. There is a marked change in tastes according to the religion
too.
The Namboodiri cuisine, one of the oldest in Kerala, is strictly
vegetarian and is prepared with fresh vegetables and coconut milk. The Moplah
cuisine of North Kerala reflects a heavy Arab influence and is more of non-vegetarian
with fish, poultry and lamb. The central Travancore cuisine of the Christians
is localized with plenty of coconut based flavours. Famous dishes like fish
pollichathu , fish pattichathu, fish mappas, fish piralan as well as appam and
stew belong to this form of cuisine.
