INDIGENOUS CUISINE

As a complement for your present vacation, you can enjoy indigenous cuisine of Lombok. Some of them are Taliwang’s roasted chicken, bebalung (translation: meat soup), Tanjung’s fish sate (translation: barbecued meat or other animal’s flesh on skewers), Rmbiga’s sate , salted egg ,Puyung’s mixed rice and also innards sate and bulayak ( rice cake boiled in a elongated oval shaped packet with plaited young coconut leaves. ). It is not difficult to find these indigenous culinary anytime you arrive in Lombok. Besides the food stalls available in the city, you can also find them along the way to certain tourist destination.

TALIWANG’S ROASTED CHICKEN

It is easy to recognize the origins of certain culinary of Lombok. Name of certain culinary is often followed by the area from where it originates. For instance, Taliwang’s roasted chicken comes from a place called TAliwang in Mataram. Puyung’s mixed rice originates from a place name Puyung in Lombok Tengah. Rembiga’s sate comes from Rembiga in Mataram, as well as Tanjung’s fish sate originates from Tanjung districts in Lombok Utara.

Taliwang is the place where the famous roasted chicken of Lombok comes from. The center of Taliwang’s culinary is located on Jalan Ade Irma Suryani Mataram until the end of the street, where you can find a lot of restaurants that offer the special Taliwang’s roasted chicken. Though the area is located in a suburb of Mataram, many travelers come to enjoy their meals there.

A restaurant in Pajang named Taliwang Moerad, located in downtown, also offers this appetizing culinary selection. This restaurant has run their business for decades. People may say that it is the first restaurant that offers this menu. Until now, Moerad’s taliwang roasted chicken is well known by domestic travelers . The menu often becomes reference for Lombok’s indigenous cuisine.

Taliwang offers various tastes, including the original one, ayam pelecingan (translation: chicken mixed with sauce of pelecing), fried chicken, roasted chicken with honey. Except the fried chicken, all menus are processed with similar sauce. Processing and additional spices to strengthen the taste are the only aspects differentiating all menus. What is more about Taliwang is Ayam Pelecingan ( translation : pelecing is original sauce of Lombok made of tomatoes and chilies). This cuisine is served as spicy food choice. This indigenous culinary is quite challenging for culinary chaser. This menu is compatible to ayam rica rica of Sulawesi. Yet, ayam pelecingan has more though taste. Other supporting feature differentiating this cuisine is an additional menu of pelecing kangkung. This additional menu is famous among travelers from Jakarta and Surabaya for its soft texture. It may boost up your appetite.
