BEBALUNG
Bebalung in the local language
means bones. Basically, bebalung is local soup cuisine, which using ribs or
oxtails for a cow. By exploiting various spices and flavorings, this menue
offers such an exclusive taste compared to other soups in Lomboj.
A Taliwang’s
roasted chicken , bebalung soup is widely known and chased by domestic
travelers., though not so much alike to the roasted chicken culinary. For a
cupful of bebalung , the price is 30000 rupiah.
One of the most famous restaurants
offering bebalung in Mataram is Klebet. It is located behind (north ) of
governor ‘s office of NTB, facing Jalan Hos Tjokroaminoto. Klebet gives their service
from morning to evening, in which it offers bigger portion of bebalung than
other restaurants in Mataram.
They serve the finest selected and well cooked
meats and ribs. It is served with spicy sauce made of tomatoes and chilies that
creates more delicious flavor. Besides in a restaurant or food stall spread
over in Mataram,you may find this culinary in a
number of hotel in Mataram. Hotel managements have begun to add bebalung
as an optional indigenous menu offered to visitors.
BULAYAK
SATE BULAYAK is a set of culinary selection that consists of sate and bulayak. As mention earlier, bulayak refers to rice cake boiled in an elongated oval shaped packet of plaited young coconut leaves, a bit different in shape with topat. Bulayak is made of cutlets ( of cow or chicken meats) , which also baebequed as sate in general.
Thus , both are served with special liquid sauce set apart in a plate with less spicy taste compared to Taliwang’s. This local cuisine is commonly found around Narmada Park. Developing tourist industry encourages local people to expanse their market to Mataram, around Jalan Udayana. In this area, we may find many teenagers spending their free nighttime with friends, much alike with Malioboro in Yogyakarta.
For you who like spicy culinary may request the local vendors to serve you with liquid sauce made of peanuts , coconut milk, coriander, onion, caraway seeds and chilies. This optional spicy sauce can give different sensation in enjoying sate bulayak. Besides this menu, we can also find sate Rembiga located not too far from Jalan Udayana.
You can just take a walk to the food stall. In the location, you may find many stalls that offer this unique dish. In general, this local cuisine is similar with other sate, using beef and mutton as the main ingredients. But, it offers great taste from its special made sauce and seasoning that make it spicy and different to other sate all around Indonesia.
PUYUNG’S MIXED RICE
The most famed Puyung’s mixed rice vendor is the one pioneered by Inaq Esun( translation: inaq means mother , commonly followed by name of the person or her oldest child ). From airport, if you take drive to Mataram through Praya, you will pass the area called Puyung. Many food stalls offer this special culinary. You may also find ones right across the airport.
The name of this cuisine is after the name of the place. You only need to spend 10000 rupiah to enjoy a plate of this menu. Some features of Puyung’s mixed rice that differentiate it with others are shred chicken, sahur (local food made of fried seasoned grated coconut), fried soya bean, with its super-hot taste.
Hence, it is wrapped with banana leaf. Everybody knows that super spicy taste is strong feature of Puyung’s mixed rice. To less to spicy effect while enjoying the food, it is not suggested to drink sweat beverage.Now you can also find numbers of stalls offer this menu in Mataram. Local people love this food, especially for those who like to stay awake at night. Recently, many domestic travelers prefer to have this menu.
