INDIA ODISHA CUISINE
Chicken has become popular and is generally prepared in
spiced gravy.
The meal is typically washed down with chalha, a drink made
up of yoghurt, cumin seeds, curry leaves with a consistency much thinner than
that of lassi.
Today, street foods from across India, such as rolls and
momos, are easily available in the major cities of Odisha. Of the more local
snacks are chaat, googooni, gupchup ( similar to gol gappa), dahi bara aaloo
dum, bara, piyaji , singaram masala and onion, tomato, green chilies , drizzled
with some mustard oil ) and aloo chop.
MEETHA
Odisha has also boasts of averity of sweets or meetha. The
sweet dishes in Odisha are generally steamed and mostly the core ingredients
are chena, milk, sugar, coconuts etc. One must try out chena podo, a dish made up of sweetened steamed chhena with a caramelized crust and the
assortment of pithas, colloquial term of rice cakes, or sometimes wheat cakes.
These include manda pitha (a steamed pitha with sweet coconut filling) , podo pitha ( a slow cooked pitha with a slightly caramelized crust0, kakara pitha ( deep fried pitha with sweet coconut filling ), arisa pitha (deep fried pitha made with jiggery or sugar), haldi patra pitha ( a vibrant o the manda pitha, wrapped around in turmeric leaves and steamed ) and atal pitha ( made from palm fruit). .
